Easy Rocky Road Recipe

I’m going to open with a bold statement today…..this Rocky Road is the best one I’ve tasted! Oh yes our house went into chocolate meltdown when we tried these the morning after I made them.

There are plenty of ways to make this and we gave a couple of them a try before hitting the jackpot with this. So in good myrealfairy tradition, this Easy Rocky Road recipe is the one to share with you.

What you will need is:

300g Milk chocolate

75g Butter

2 tablespoons Golden Syrup

1 cup Marshmallows

1 cup Maltesers

What you need to do is:

Break up the chocolate into pieces so that it melts easier.

Place the butter and chocolate into a saucepan and put on a low heat. This recipe is all about being gentle with the heating, don’t rush it.

Add the 2 tablespoons of golden syrup and stir in while still on the low heat.

As soon as this has all melted together, remove from the heat. Crush the maltesers so that they hold some chunks to them and are not totally bashed to crumbs. Now eat a couple of the maltesers that haven’t been crushed – originally there were many more than shown in this picture, they are too tempting not to eat a few while making this. Go on treat yourself to the cook’s perks:)

Fold in the marshmallows and maltesers to the chocolate mixture. Put into a foil tin or baking tray which has sides to it so that you can get that Rocky Road look to it by having it around 1 inch (2.5cm) high.

Leave in the fridge overnight. In the morning turn out onto a chopping board and cut into cubes. Sprinkle with some icing sugar if you fancy. Product test by having at least a square to yourself with a cuppa before popping into bags if giving as gifts. I suggest leaving in the fridge until needed to keep firm and crunchy.

Carrot and Gogi Berry Loaf Cake

I’ve been wanting to make a carrot cake for a little while now and I wanted to give it a bit of a twist, something to make it stand out from the crowd. Well I have done just that! Adding Gogi Berries to it has given it a lift and a flash of colour, I love it!

I’ve used Gogi berries before and was looking for other recipes I could adapt so that I could make even more use of this yummy fruit.

Add a twist of something special to this lovely Carrot cake with these super cool Gogi Berries

Course: Dessert
Servings: 10
Ingredients
  • 50 g Dark brown sugar
  • 2 Eggs
  • 125 ml Rapeseed Oil
  • 3 large Carrots
  • 50 g Gogi Berries
  • 150 g Plain Flour
  • half teaspoon Baking Powder
  • half teaspoon Bicarbonate of Soda
  • 1 teaspoon Mixed Spice
  • 30 ml Maple Syrup
Instructions
  1. Grate the carrots (these will be part of your wet ingredients)

  2. Mix all of the dry ingredients together apart from the Gogi Berries in one bowl then set aside.

  3. In a food mixer put all of the wet ingredients and mix until combined.

  4. Combine together and add the Gogi Berries.

  5. Pour into a medium loaf tin

  6. Bake for 35 mins on 170oc

This is great to use up some of those extra ingredients you might have around the store cupboard. Another easy recipe which big results is my Cheese Scones which are super quick. If you fancy a sweet treat try my Ultimate Chocolate Brownies!

Quick tip!

If you want to rehydrate dried Gogi berries then pop them in a bowl or cup, pour over boiling water and leave for 10 minutes. Drain well and then they are plump and juicy, ready to use.

Easy Cranberry Sauce Recipe

This is a great easy cranberry sauce recipe as it is so quick to make. Also it has just 3 ingredients. It couldn’t be simpler to prepare, even at short notice as it only takes 15 minutes. Super tasty and looks great too. I love it with any of my christmas roasts and it can be used with your desserts too. I enjoy putting it with mince pies and cream.

What you will need is:

12oz cranberries

1 cup of sugar

1 cup of orange juice

 

Start by washing the cranberries in cold water and drain.

Place the orange juice and sugar in a large saucepan.

Stir together and bring to the boil.

When it’s reached boiling point turn down the heat to medium and stir until the sugar is dissolved.

Add the cranberries and bring to a gentle simmer. You will hear and see them pop a little. Be careful of splashes so don’t get too close. Simmer for 10 minutes.

Remove from the heat.

Leave to cool until they reach room temperature.

Place in jars. It can be stored for up to 2 weeks in the fridge.

It can also be frozen. If you want to do this then pop it into a freezer bag or appropriate plastic container and freeze when cool.
